Perpetual Veggie Stock

It would not have been possible to rescue the caramelized onion and make french onion soup had it not been for the sandwich artist’s foresight and ingenuity. Behold: her secret for avoiding food waste and guaranteeing the freezer is well stocked with tasty stock. Do you see what we did there?

The secret is a Pyrex container with a snap lid that lives in the freezer. Every time you seed a tomato, stem a mushroom, or chop fresh herbs the ‘waste’ goes in. When the container is full it is time to make stock. This year we’re drying herbs and the stem gems are making for some very tasty broth.
