The secret is a Pyrex container with a snap lid that lives in the freezer. Every time you seed a tomato, stem a mushroom, or chop fresh herbs the ‘waste’ goes in. When the container is full it is time to make stock. This year we’re drying herbs and the stem gems are making for some very tasty broth.
